Halley is the white wine that Massimiliano dedicates to his paternal grandfather who has this very name. The project includes the first vinification of Carricante di Milo, but in 2023 due to the prenospora the harvest is almost entirely damaged. In order not to stop and continue the production, it is decided to buy some Cataratto in Marsala from an old supplier of Halley. And so the 2023 vintage will be the first and only one with this grape variety.

    Soil and Altitude: Medium texture, tending towards calcareous Altitude 450 m above sea level

    Vineyard Training and Age: Organic espalier sapling, age 20 - 30 years

    Harvest: Manual, harvested on September 26th

    Vinification: Crushed/destemmed with 3-day maceration in large vats. Daily punching down to allow the operation of lowering the marc and re-immersing it in the fermenting must. Thus breaking the mass that compacts on the surface, the cap carried by the carbon dioxide bubbles, to facilitate the aeration of the must and encourage the multiplication of alcoholic ferments, as well as extracting color and aromas from the must. Soft pressing and end of fermentation in steel tanks. The wine is not filtered, but only a natural decantation, aided by 2 rackings, which allow a clean and bright color, as well as a rich and deep structure.

    Refinement: lasted just over 1 year before being bottled
